Linguine Prawn

Method:

  1. Cook the linguine in a large saucepan of lightly salted boiling water, according to packet instructions or until al dente.
  2. Once cooked take off the heat and drain well. (You will need this to toss through your prawns and other ingredients at the end)
  3. Whilst pasta is cooking, heat two tablespoons of the olive oil in a large frying pan over a medium heat. Add the garlic and chilli, cook stirring for 30 seconds or until aromatic.
  4. Add the prawns and cook stirring occasionally for two minutes or until golden brown
  5. Douse in white wine, let cook for an additional 30 seconds
  6. Add butter, cherry tomatoes and parsley, with a little bit of pasta water and let all ingredients combine.
  7. Add the prawn mixture to the hot pasta with olive oil, rocket salt and pepper, toss until well combined.
  8. Serve immediately with chopped fresh parsley and pangrattato.
